This is my granola recipe from my friend and old roommate Alia (the best granola maker of all time). When I think granola, I think about Alia making the house smell wonderful on cool spring days in Halifax.
This is what the recipe says:
3 cups of old fashioned oats
1/2 cup of walnuts and almonds chopped together
sesame seeds, sunflower seeds, poppy seeds, coconut
cinnamon, nutmeg, allspice, cardamom, any savory spices you have
1/4 cup of oil, sesame or olive
1/3 to 1/2 cup of maple syrup or honey
A little vanilla
bake a 375 for between 7-12 mins. Watching. Don’t let it get brown in the oven or it will burn! When it comes out add raisins or chopped apricots, or dates, whatever is needed to round it out.
I’m not very good at following recipes so I approximated most of this but I think the main thing is to make sure you have enough oil/syrup to coat all the ingredients so that they bake and get golden. And, of course, that the ingredients are balanced enough to work.
For this round I used walnuts, almonds, sesame/flax/sunflower seeds, lots of coconut, cinnamon, nutmeg, allspice, cardamom, olive oil and maple syrup (I live in Quebec, that was a no brainer choice). I mixed it all up in a big bowl to make sure that the wet ingredients covered all the dry ones throughly, spread it all out on a cookie sheet and baked it, stirring often (hence the burn on my hand), until it seems crisp (probably about 15mins). Once it was cool I mixed in dried apricots.
It tastes great dry, looking forward to having it with yogurt tomorrow morning.
